Sugar Free Candied Almonds
These tasty treats are simple to make and use erythritol, a sugar alcohol.
Sugar-Free Candied Nuts
Makes 10 servings
Prep time: 15 minutes

2 Tbs. water

1 ½ cup erythritol

2 ½ cups unsalted almonds or any other nut, roasted

1 tsp. cinnamon

1 tsp. vanilla extract

½ tsp. salt (optional)

In a saucepan, combine water, ¾ cup erythritol, cinnamon, vanilla and salt and bring to a boil. Let boil for 6 minutes then add nuts.

Stir nuts continuously and coat thoroughly with the liquid.

Using a slotted spoon, transfer hot, coated nuts a few tablespoons at a time to a bowl that has remaining erythritol. Carefully shake bowl to cover the nuts with the erythritol. Use a slotted spoon to transfer coated nuts cool on a baking sheet and repeat to coat all nuts.
